Many of the items in the Food, Materials, and Other tabs have no use. Food items can be eaten, of course, and all of them can be hoardsold for a little cash. Crim (at the Trading Post) will buy random items for much more than they're worth (500t or double their hoardsell price, whichever is higher) so you might want to keep a couple of each item. Items can also be melted in the Transmute tab of Baldwin's Brew (also in the Trading Post) for alchemical goops that can be used in recipes.
Swipp's Swap Stand and the Create tab of Baldwin's Brew require specific items for some recipes. These items can be used to create exclusive ones, or if you don't want that item, they are more valuable on the Auction House (Hint: selling all the ingredients on the AH will net you more than enough to just straight up buy the item they produce). Here is a list of all such items in hoard order, and here is a list of them by location (Gathering or Coliseum).
