Rainforest I'd point to the
Temeraire series by Naomi Novik; it's historical fiction with fantasy elements.
Its set during the Napoleonic wars, but if they had dragons! The story starts off with Laurence, a Navy captain of Britain who captured a French cargo ship containing a dragon egg of unknown breed and origin, though before they can make landfall, the egg hatches and Laurence has no choice but to put the young dragonet into harness so that it will not fly away and become feral--and through the process permanently binding himself to the small infant, as well as forced out of the Navy and into His Majesty's Aerial Corps.
There are nine books in the series total, and the first book is called
His Majesty's Dragon; I'm currently in
Empire of Ivory, the fourth book of the series, and I'm loving every page!

Haven't gone through the other posts so sorry if any of these have already been suggested!
For dragons I'd definitely have to recommend the Inheritance Cycle by Christopher Paolini and the Rain Wild Chronicles by Robin Hobb. They're two of my all time favourite series and I absolutely
loved them both.
If you like YA or modern fantasy I'd read Cassandra Clare's Shdowhunter books. There's a tv show but personally I think it's terrible and even if it were good it could never do the books justice.
Don't really read a lot of horror, but Prince Of Thorns gets pretty dark from what I've seen (I've only read the first book but the main character, Jorg, is a bit of a sociopath)
This one isn't fantasy but it's an incredible read and quite possibly the best thing I've
ever read: Pierce Brown's Red Rising trilogy. Just. You're not alive until you've read this.

I feel compelled to warn you that Scythe made me really mad at a few points, just a heads-up.
My suggestions are:
The Belgariad
Archangel (and all the books after it)
Rose Daughter
The Warlock in Spite of Himself
and Night Circus
Night Circus is the one I suggest the most, btw.

I can't tell you why Scythe mad me mad specifically, that would be spoilers, but I can tell you that a character started acting against the principles he started off with.
